Sorbetto is the non-dairy, non-fat equivalent of gelato. The texture and consistency of sorbetto -- so creamy that one might mistake it for ice cream -- is achieved by painstaking technique. Like our gelati, we make sorbetti also only in small batches, turning, whipping, and churning slower, thereby allowing less air to be incorporated into the final product.
