GELATO

Literally translated, gelato is the Italian word for ice cream -- yet, one must never mistake them to be equivalent to one another.

Traditional Italian gelato is a world apart from commercial North American ice cream.

At VIVO! Gelato, we make our gelati in true artisan fashion, using only the finest all-natural ingredients, without any preservatives, according to the most meticulous of techniques.

Unlike commercial ice cream, we make gelato only in small batches, taking the time and utmost care to ensure that the final product lives up, not only to the high standards set by the artisan tradition of gelato-making, but also to our own philosophy of excellence.

As a side note, gelato uses only milk to achieve its creamy texture and consistency unlike North American ice cream which relies on milk and heavy cream.

Thus, gelato has lower butterfat than ice cream -- typically 4 to 8 percent. Most commercial ice cream contains anywhere from 10 to 15 percent butterfat, while those marketed as premium ice cream may contain as much as 24 percent butterfat.
